Located atop the Fontainebleau in LV lies this Top notch sushi resto with an amazing ambiance and stellar service! This place totally deserves a Michelin star! Fish flown in from Japan regularly paired with an amazing sake selection makes this place a must experience omakase. One of the better places outside of Tokyo that I've experienced.

You have the most beautiful view of Vegas from the table and the chefs were very interactive. I was so happy and full! Would highly recommend trying this place out!

Great view. Very intimate hidden deep in the resort. Good vibe. Service is good too. Professional and attentive. Nothing to complain abt. Food on the other hand, is not good. Fish is okay fresh but not tasty. Not a big fan given the price.

This restaurant is the whole package, Michelin level experience from the moment you enter the bar and into the dining room. The service was impeccable yet not stuffy. The welcome cocktail was delicious and refreshing. The was one of the most memorable dining experiences I have ever had! 19 courses of the highest quality fish and Wagyu literally melting in your mouth. The showmanship of chefs all I can say is Shinobi.

.." A wonderful Americanized omakase sushi experience made even better by its exclusivity and view. I've had dozens of Michelin starred and ichigensan okotowari (invite only) omakase sushi experiences in Japan. I can say with certainty, with rare exception, we do things differently in the States. Japan's top sushi eateries rarely take fresh caught fish, cut it up and serve it. The way seafood is treated ie aged, smoked, sandwiched in konbu, scalded then cut and seasoned and paired with seasonally available ingredients are done with purpose. Even the progression the nigiri are served is deliberate so flavors build on each other. Here in the States it's authentic because all the ingredients come from Japan and it's special because it's expensive and "everything is so fresh". Hey, who doesn't love to eat authentic, luxe, freshness? A series of composed starters are followed by a progression of nigiri. 19 total dishes in all. Seafood is fresh, well sliced, well seasoned with some seasonal representation. Quality rice cooked and seasoned well. Signature dishes do impress. The chirashi of uni, ikura, and ossetra caviar is very good. Using a classic caviar adds a punch of salinity and creamy, yolky goodness that ties the uni to the ikura. The elevated version of adding soy sauce raw egg yolk to your basic uni / ikura bowl. A seared A5 wagyu nigiri is a great one biter. Torched to release sweet melting fat, it is then topped with a heaping of finely shaved truffle. A great way to bring ot the best of both A5 and truffle! Good selection of unique cocktails, sake and whiskey that work with the food. $400pp non inclusive. 12 seats with two seating per evening. Choose the later seating during the Summer months to enjoy the lights of the city. Flawless service. The experience falls just shy of the more relaxed but more gluttonous $500 omakase experience at Kame Omakase. Regardless, "everything was so fresh".

Ito Sushi at Fontainebleau Las Vegas is a jaw-dropping omakase experience, easily one of the best sushi spots in Vegas, if not the whole damn desert. The fish? Pristine. The rice? Perfectly seasoned. The technique? Immaculate. Every course is a little love letter from the chef to your taste buds. But full disclosure: it's stiff. Not your vibe if you're looking for playful banter and loud like myself... Chefs tend to ANNOY by my BIG personality... Well, I'm in Vegas... You expect me to behave???? This is why to go to Vegas in the first place! To celebrating my bestie's birthday and finished my 3L... I'll wash my mouth with soap and wear duct tape next time, HA! This is sushi with its pinky up, refined, formal, and flawless. Pro tip: Before diving into Ito, make a detour to the Tangier Whiskey Bar right downstairs. It's the prelude you didn't know you needed. Then upstairs to Bar Ito, Bartender Danny is a gem; exquisite pours, WARM hospitality, and the kind of conversation that makes you forget you're in a mega-resort. Oh, and if you're lucky enough to get a sneak peek into the Poodle Room? Do it. Velvet, glam, and all the mid-century cool. A little secret moment in Vegas that feels like you're in on something special.

Literally from the moment you enter the doors downstairs by the Poodle Room podium to the second you leave those doors at the end of the night you were transported to unparalleled opulence. Exquisite cocktails and pairings from Danny. A view unmatched view of the strip. Master craftsman sushi chefs preparing world class food. Professionally cared for with undivided attention in an intimate omakase setting tucked within the lavish private Poodle Room. My wife & I have dined at the finest restaurants all over the world & I can truly say that this will be a night to remember. Congratulations on doing everything right!
I had a reservation with ITO that they abruptly canceled
I had a reservation with ITO that they abruptly canceled the same day without properly notifying me. I had already entered my credit card info and even responded to their message asking about allergies--yet they claimed I didn't "confirm" the reservation through a separate email link. First of all, I never saw that email--it likely went to spam--and my text messages weren't working because of my eSIM setup. So how was I supposed to confirm if they only gave one way to do it? Why take my credit card and ask about allergies if you're going to cancel without warning? Instead of reaching out again or simply charging a no-show fee like they stated in their cancellation policy, they just canceled the booking entirely on my behalf. It felt careless and dismissive for a restaurant that claims to offer a premium experience. Honestly, very disappointed.
Mostly about the fish, not the prep
The sushi was very, very good. However, at this price, I expect gold. The first three courses were gold: amberjack with a apple-infused sauce, medium fatty tuna, the uni bowl. The miso-fish broth that followed was very good. Then, a great many courses of nigiri were served. The quality of the fish was excellent, but the experience of eating 14-15 courses of nigiri just did not equal the first part of the meal (although the cherry blossom infused tuna was a standout). Basically, at $20 a course, I want to be wowed by the chef, not only served great ingredients.
A life changing Omakase
Dined on 3/2/24 Located atop the recently opened Fontainebleau, Ito’s 12-seat, 20-course omakase dining experience emerges as a standard bearer in the crowded Las Vegas dining scene. There is no set menu. Dishes are curated daily, and the service is anchored by fresh fish flown in from Japan. Ito is one of the very few multi-course, steeply-priced dining experiences that I feel is truly worth the price tag. I would return without hesitation. Dining at Ito was much more than just a meal. It was a full sensory experience. I’ll share with you what I shared with them: Ito is one of the best culinary experiences I’ve had in 40+ years of traveling the world. Highest marks to the team for taste, presentation, service, and overall experience. And kudos to Chefs Masa Ito and Kevin Kim for so successfully translating their Tribeca Ito concept to Las Vegas. For a spectacularly memorable evening, domo arigatou gozaimasu! Reservations are offered Tuesday through Saturday for 6 pm and 8:45 pm seatings. Check your pricing before you reserve
So I will start by saying the food is absolutely amazing. Unfortunately we had no idea what we were booking as there was no menu or pricing when we booked it online through sevenrooms. It sounds like we probably shouldn’t have even been able to book this place as regular guests as this is a VIP restaurant, Rewards people we talked to at the hotel had no idea how we were able to book it. Incredible room and service is 5 star however the minute we walked in we were very afraid that we were in a level above ours. We could not cancel as the cancellation fee was extreme. So we sat through it. Incredible food and view but stressed the whole way worrying about the bill. The seating costs $400 per person USD, which you found out when you got the bill. Guess we could have asked but with a small room we were too embarrassed to ask. The $400 per person only includes food no drinks or water (bottle of water is $22USD. So our bill walking out with tip was $1100 USD. Was it great, yes but this is just a level or two above a regular persons “fancy” dinner. So I give it a 3 star to warn people that may get caught the same way we did. The cost will damper the rest of our 4 day trip.
One of the best dining experiences of my life
Ito was the perfect place to celebrate our anniversary. Living in Las Vegas makes it kind of hard to find truly unique and amazing dining experiences since there are so many incredible restaurants. ITO stands out as a dinning experience in Las Vegas. It has an intimate setting (limited number of seats) and probably the best view in Las Vegas. As we moved through each course we found our selves continually saying this is best sushi that we had ever had, yet each new piece some how was better than the previous. As we neared the end of the tasting I actually found myself lighted headed because that cut of fish was so amazing. I didn't know food could evoke that kind of response. Eat her for fun, for business, or just because you want to have an incredible time. The staff was very attentive and you can tell well trained. The chefs where very conversational and provided knowledgeable insight on each course. I will note that I did not know we could arrive 30 minutes early for our seating, which we would have done had we known, because ITO has a cozy Japanese Whisky lounge you can sit in and have a pre meal cocktail. The selection looked to be pretty extensive and I would have definitely tried a new label.

1.) Setting a Reward (Bid)
* AppointmentTrader uses historical data to recommend a reasonable reward amount for securing a reservation - let's say $100.
* Peter really wants to go, so he increases the bid (or reward) to $200.
* At this stage, the reservation does not exist yet.
2.) A Community User Picks Up the Bid
* FamousStation67, an experienced AT user, has a strong track record of successfully securing reservations and low refund requests, they receive a notification about Peter's bid.
* FamousStation67 picks up the bid, meaning they will now work on securing the reservation.
* Peter can now talk to FamousStation67 for any questions Peter may have as FamousStation67 user fills the bid.
3.) Finding the Reservation
* FamousStation67 now uses their connections at ITO Las Vegas to secure the table.
* If they successfully get the 6 PM table for four, Peter receives a confirmation that the reservation has been secured.
* If FamousStation67 fails to secure the reservation, the bid is returned to the pool so another user can try.
4.) Payment & Protection
* Once the reservation is secured, FamousStation67 receives the $200 reward which is credited to FamousStation67's AT balance, where users manage their own funds and can withdraw via available payout options such as bank transfer, PayPal, or Zelle.
* Peter can now enjoy the dinner with his friends at ITO Las Vegas!
* As with all transactions on AT, disputes and no-show fees are handled through the platform's community-driven resolution system. Users with a strong track record are incentivized to fulfill bids successfully, and community members can report issues to maintain trust in the marketplace.
